May/June only: Roasted Snow-Clave Aged Pork Course - Italiano Course

For the Italiano Course, we have prepared snow-aged pork for the carne, which is tender and sweet due to the snow aging process. The tender, slow-roasted meat is a perfect match for the green pepper sauce with just the right amount of spiciness and aged flavor. Other dishes include a pescetto of fatty salmon served with a rich vegetable sauce, and a pasta dish with a light tomato cream that brings out the full flavor of the bacon.

We have prepared carne of Shimanto pork raised in nature and in the water of the Shimanto River, the last clear stream in Japan. It is characterized by its tender meat, high quality fat, and sweet flavor, and is a perfect match with our rich Bordelaise sauce. Other dishes include a salad of fatty swordfish with a sauce that draws out the full flavor of ripe tomatoes, and dolce with two types of desserts: semifreddo (white peach sherbet) and blancmange with hojicha (roasted green tea).
